Synopsis

Hastings opens by demolishing the statistics his own industry quoted, then works out where in America eggs can actually be produced at a profit and prints the maps. He argues that poultry farming succeeds as a community of ordinary farms rather than a concentrated plant, that hens belong in the open air, and that stocking density is the hidden cause of most disease. Practical chapters follow on farm layout, incubation, feeding, illness, fattening, chicken breeds and breeding, with a long and unexpectedly gripping account of how a fresh egg becomes a graded, cased, cold-stored commodity somewhere between the farm gate and a city breakfast. For eighty years the industry did the opposite of everything he recommended. Growers rebuilding pastured flocks from first principles found the arithmetic already done, and done well, in 1911.
